These are my new favorite weekend waffles! Light, fluffy, with a delightful texture from the cornmeal. One batch makes two large waffles in my rectangular waffle iron. A whole waffle is 4pts, or 2 pts for a half.
Ingredients:
1 cup Bob’s Red Mill organic cornmeal waffle mix
1 egg + 1 egg white (discard extra yolk)
2 Tbs natural applesauce
3/4 cup cold water or light vanilla soymilk
Directions:
Preheat waffle iron. Blend all ingredients just until mixed (small lumps are okay; break up any big lumps). Spray heated waffle iron with non-stick spray, then pour on enough batter to lightly cover bottom tray (about 3/4 cup). Close waffle iron lid. Cook until the steam begins to diminish, about 5 minutes–then carefully open waffle iron SLOWLY to check doneness. If the waffle sticks, gently loosen the edges with a fork. Because these are very low-fat waffles, you may need to use a fork to help you gently lift the waffle out of the iron. Top with desired toppings (my favorite is maple syrup and a handful of fresh blueberries) and enjoy!
